Marinated Oyster Mushrooms with Onions
I love oyster mushrooms and even bought two different kits of mushroom to grow oyster and shiitake. Almost once a week I cut fresh mushrooms. There aren’t a lot but you can marinate them or fry them with garlic, herbs or potatoes for dinner, add to risotto or soup, make a sauce for ravioli, fry with other mushrooms, etc.
This time I decided to marinate them with crispy onions, a great appetizer to meat, and potatoes. This can be stored in the refrigerator for about a week.
Marinated Oyster Mushrooms with Onions Recipe

Ingredients
- 500 g oyster mushrooms
- water
- salt totaste
- 1 onion
- 1-2 cloves of garlic
- 1 bay leaf
- 10 black peppercorns
- 2 tbsp vegetable oil
- 2-3 tsp vinegar +2 tsp water
Instructions
- Cut the large mushrooms into strips and leave the small ones as is. Put the mushrooms in a saucepan, add water (it should slightly cover the mushrooms), add salt then boil and cook over medium heat for 5 minutes. Drain the water, and cool the mushrooms.
- Cut the onion into thin rings and place in a small bowl to marinate in vinegar and water for 3-5 minutes. Then dry the onion.
- Finely chop the garlic. Mix the mushrooms, onion, garlic, bay leaf, black pepper in a bowl, pour vegetable oil on top, stir, close tightly and place in refrigerator to marinate for 5 hours. Before serving, add salt, pepper or vinegar to taste.
