Ingredients
- 400 g pork tenderloin cut into medium-sized medallions
- 100 g mushrooms
- 1 small onion
- 3 cloves of garlic
- ~2 tbsp mayonnaise or to taste
- 150 g cheese grated
- salt, pepper
- olive oil
- basil leaves
Instructions
- In a pan with olive oil, fry the medium-chopped mushrooms for 3-5 minutes, then add finely the chopped onion and garlic and cook for another 3 minutes, stirring all the time. Turn off the heat, and cool. Add chopped basil and mix.
- Set the pork medallions on a baking sheet with foil or a silicone mat, close to each other, and add salt and pepper. Put the fried mushrooms and onions on top of the meat, add some mayonnaise (about a half of tablespoon on each medallion or to your taste) and sprinkle with grated cheese on top. Cover the pan with foil, leaving a small hole. Cook in a preheated 200C oven for 20 minutes under the foil in the middle shelf, then remove the foil and cook for another 10 more minutes. Serve immediately.
