Panini with Caramelized Onion, Peaches and Cheese
Great combination of caramelized onions with sweet and sour peach, nuts and cheese. This is a versatile recipe you can try with different combinations of the above like switching out the peaches with pears or figs, and with goat or mozzarella cheese. So many combinations that you’ll always find something new!
When making a panani, it’s important to have a good press. I use a gas range with a griddle on top so I use a simple press like this, but a popular alternative is an all in one panini press/grill like this. Either way will work and each can be used for other dishes besides Panini.

Ingredients
- 1 large onion
- olive oil
- 1 tbsp balsamic vinegar
- 1 peach canned
- 1-2 tbsp walnuts
- 4 slices bread
- 1 tbsp butter
- 4 slices cheese Jarlsberg
Instructions
- Cut the onion into thin slices and fry in olive oil over low heat for about 10 minutes. Add the balsamic vinegar and cook about for 20 more minutes, stirring all the time. If necessary, you can add a little more olive oil.
- Slice the peach. Roast the nuts on a dry frying pan for couple min. and chop them (not too finely).
- On each piece of bread, spread butter on one side. Put the cooked onion on 2 slices of bread, then the sliced cheese, nuts and peaches, close together and put on a heated grill with a press. Cook for 1-2 minutes, until cheese is slightly melted .
