Light and healthy salad, I really like the combination of fish with lettuce, basil and lemon.

  1. Remove small bones from the salmon, then clean and dry with a paper towel. Pour the soy sauce in saucepan, add sugar and cook, stirring, over medium heat until sugar is dissolved. Place the filet in a bowl and cover all sides with the sauce. Cover pan and leave for 10 minutes.
  2. Peel cucumbers. If seeds are large, remove them, cut cucumbers into cubes 5 cm long and about 1/2 cm thick. Wash the lemon and remove the zest with a grater. Squeeze the juice out over the cucumbers and add zest. Sprinkle with salt and mix well.
  3. Heat the pan then add the salmon and fry for 3-4 minutes on each side, until crispy. While preparing salmon, break lettuce lives with hands and place into a bowl. Also add the basil leaves. When the salmon is done cooking, remove from pan and cut into thin slices. Mix the cucumber with lettuce and basil, spread on plates. Top with salmon and serve.
