Fried Plantain with Sour Cream
Plantain or Cooking bananas (plátano on Spanish) are large bananas which usually require cooking before eating them. They are large with a green or gray-greenish rind and contain more starch and less sugar than regular bananas, and have a hard and savory flesh. Before eating, they can be steamed, boiled, grilled, baked, or fried. In most Spanish-speaking countries, Plantains and regular bananas are not distinguished, and both are called plátano. Most often Plantains can be found as a snack or side dish, cut into thin slices or strips, fried in oil, and decorated on top with salt, sour cream, and grated cheese. Also, they are very tasty when stuff with cheese as well. Usually, green plantains are cooked like potatoes – fried, boiled or deep fried. If it is ripe and yellow, it can also be cooked in the oven or on the grill.
Here is very simple but tasty fried Plantains recipe, Platanos fritos con queso y crema, with cheese and sour cream. Usually, we make them for breakfast but it can be used as an appetizer as well. In this recipe, it is better to use ripe, yellow (not green or overripe).

Ingredients
- plantain
- canola oil
- sugar or brown sugar
- sour cream
- cheese grated Cotija cheese, queso fresco, or a mix of mozzarella and queso fresco
Instructions
- Cut the plantain(s) into the thin strips (or circles). Heat the vegetable oil in a pan (you can mix the vegetable oil with a little olive oil), lay the banana strips into the pan, flavor them slightly with sugar or brown sugar, and fry from both sides until golden brown. Put on a dish, sprinkle finely grated cheese on top, and drizzle with sour cream. Serve immediately. For the cheese, you can use: grated Cotija cheese, queso fresco, or a mix of mozzarella and queso fresco
