  1. Cut the eggplant and zucchini into thin slices and fry in the oil until golden brown. Add salt and place on a paper towel. Grind in a mortar the parsley, cilantro and garlic with a pinch of salt and lemon zest.
  2. Cut out circles of dough and on each put a little mix of herbs and garlic, about 1 teaspoon, then eggplant, zucchini and tomatoes, and in the center add a little more garlic-herbs mix.
  3. Bake it in the oven at 200'C (390F) for about 20 minutes or until cooked dough. Sprinkle the top with grated cheese, leave a couple of minutes in the oven, then serve.
