Ingredients
- 1 bell pepper
- 1 small cucumber
- 8 cherry tomatoes
- 8 olives pitted
- 40 g (1.4 oz) feta
- half red onion
- 1 clove of garlic
- 3 basil leaves
- 1-2 tbsp olive oil
- juice of half a lemon
- 1 tsp fresh thyme leaves
- salt to taste
Instructions
- Cut the pepper in half lengthwise, remove seeds and partitions. Cut each half into 4 strips. Slice the cucumber diagonally into thin circles. Cut feta cheese into 8 small cubes. Finely chop the onion, basil and garlic. Mix the onion, basil, garlic together with the salt, lemon juice and thyme in the olive oil. String together using a toothpick a circle of cucumber, tomato, cheese, olives. Stick the other end of the toothpick into a pepper strip. Put 8 pieces on a plate and drizzle sauce on a top.
