Pie with Vegetables and Bacon

This is a flavorful, tasty vegetable pie, made with mushrooms, pepper, carrot, shallots, tomato, bacon and cheese. In this pie, you can add any vegetables and herbs to your taste, such as cabbage, zucchini, eggplant, parsley, green onions. I used fresh shiitake mushrooms, but they can be replaced by any other mushrooms and mozzarella cheese can be switched with feta cheese.

Ingredients

Instructions

  1. Mix the sifted flour, cottage cheese, grated cheese, 1 egg, salt and sugar in a food processor. Knead dough until smooth, cover with foil or a lid and place in refrigerator for an hour. Cut the bell pepper, bacon and mushrooms into medium strips, grate the carrot, slice the mozzarella into middle cubes, finely chop the herbs, garlic and onion. Remove tomato pulp and cut it into large or medium cubes.
  2. Heat the olive oil in a frying pan, fry the garlic, onions, mushrooms, pepper, bacon, carrot, salt and pepper. Simmer about 3-5 minutes while stirring, then add the chopped herbs, stir and chill. Beat with a mixer in a large bowl sour cream and 1 egg, salt and pepper.
  3. Get the dough from the refrigerator and roll out 2-3 cm larger than the diameter of the form where it will bake. Press the dough into the pan, making sure it covers all sides. Add the fried vegetables in with the dough, add the tomato and mozzarella cheese, and sour cream on top. Bake in an oven for about 40 minutes at 340F (170'C) or until ready.
