Garlic Toast with Roasted Sweet Peppers
Fresh flavorful antipasto with garlic toast. I usually use oil infused with herbs, it gives more flavor to the peppers and is always unique. You can sprinkle parmesan cheese on top as well. Excellent and easy appetizer or side dish which is colorful and delicious.

Ingredients
- 4 slices bread for the toast
- 1 clove of garlic for the toast
- 3 bell peppers
- 4 cloves of garlic raw
- 5 tbsp olive oil
- 2 pinches salt
- 15 basil leaves
- 1 tsp vinegar
- black pepper to taste
Instructions
- Lay bell peppers on a baking sheet with unpeeled garlic cloves, drizzle with olive oil and place in a preheated 200'C oven for 30min.
- Take the peppers and garlic from the oven and let cool. Peel the garlic and peppers, and clean the seeds.
- Slice the pepper then put in a blender or food processer along with the garlic, and 5 tablespoons of olive oil, salt, basil leaves, vinegar and black pepper. Mix well.
- Toast the bread on a grill and rub with the clove of garlic when done toasting. Top with mashed bell pepper mix and drizzle with a little olive oil. Add some black pepper if you like and serve immediately.
