- 4 bell peppers
- 300 g cooked chicken breast Boiled or fried
- 250 g cooked green peas
- 1 cup of rice
- 4 tbsp black olives pitted
- 1/2 cup olive oil
- 1 tbsp rice vinegar
- 1 tsp mustard
- salt to taste
- parsley for decoration
- Bake the peppers and cut in half lengthwise. Remove the seeds and peel off the skin. Remove the skin from the cooked chicken and cut into strips, slice the olives. Boil the rice in a salted water.
- For the salad dressing, beat the oil with salt, vinegar, and mustard. Combine the rice, vegetables and chicken and add the dressing. Put the salad mixture inside the peppers and serve immediately.
