The amount of water used in the recipe depends on how you like pasta, al-dente or softer. The dish tastes great and is easy to make.
Ingredients
- 3 medium sized of carrots peeled and grated on a coarse grater
- 1 tbsp of olive oil
- 1 tbsp unsalted butter
- 1 cup orzo pasta
- 1 1/2-3/4 cup broth or water
- 1 clove garlic finely chopped
- 1/3 cup parmesan grated
- 2 stalks green onions sliced in rings
- few needles of rosemary
Instructions
- Heat the olive oil in a small saucepan, melt butter, fry garlic until golden brown in 30 seconds, add carrots and cook, stirring, 5 minutes. Add the orzo, cook another 2 minutes, then pour water or broth and cook, uncovered and stirring frequently, until all liquid is absorbed. In the end add the Parmesan cheese, green onions and rosemary. Season with salt and black pepper.
