Boquerones, Spanish Tapas with Anchovies

Boquerones is a type of Spanish appetizer (tapa) and the main ingredient is anchovies, small fish marinated in vinegar and olive oil. The first time I tried boquerones tapas was in Barcelona, you can find them everywhere in south of Spain, any bar or restaurant.

This appetizer can be made with the addition of red marinated peppers, for example piquillo peppers, black olives or capers. Instead of toast try it on potato chips! Boquerones are commonly served with beer.

Instructions

  1. Finely chop the onion and marinate in water with vinegar, adding a little salt and sugar.
  2. Toast the bread then put the marinated onion on top along with the thinly sliced peppers, capers and anchovies. Drizzle with a little olive oil and serve immediately.
