  1. Grate the zucchini and drain the liquid. Mix the zucchini with cornmeal, 1 egg, add salt, pepper and garlic powder. Mix again.
  2. Heat the olive oil, drop spoonful of zucchini batter in a pan, gently pressing on top. Cook on each side for 3-4 minutes until golden brown. Let drain on paper towels, then transfer to a plate.
  3. Slice the avocado. Heat a little butter in a large skillet, and cook the eggs over medium heat, under a lid.
  4. Put the avocado slices on top of the zucchini, top the eggs with salt and pepper and serve immediately .
