Ingredients
- 1 large zucchini
- 1/3 cup corn flour
- salt, pepper to taste
- garlic powder to taste
- 1 egg
- 1 avocado
- 4 eggs
- olive oil
- butter for cooking the eggs
Instructions
- Grate the zucchini and drain the liquid. Mix the zucchini with cornmeal, 1 egg, add salt, pepper and garlic powder. Mix again.
- Heat the olive oil, drop spoonful of zucchini batter in a pan, gently pressing on top. Cook on each side for 3-4 minutes until golden brown. Let drain on paper towels, then transfer to a plate.
- Slice the avocado. Heat a little butter in a large skillet, and cook the eggs over medium heat, under a lid.
- Put the avocado slices on top of the zucchini, top the eggs with salt and pepper and serve immediately .
