Taratushki

Taratushki was one of our favorite childhood treats. It is a popular dish among Slavic families. It’s hard to describe, something like a semi sweet donut. They deep fried which makes them a little crispy outside but soft and tender. Depending on how sweet you make them, the toppings will differ. With this recipe which will give you semi sweet taratushki, I usually serve honey, jam or maple syrup. One of my kids favorite recipes.

  1. Mix the buttermilk and egg in a bowl, add sugar, oil, vanilla, baking soda (sprinkled with vinegar or lemon juice) and salt, then mix well. Pour the sifted flour, 2-3 cups at first, then knead the dough, gradually adding the remaining flour. When kneading the dough, it should not stick to your hands. If it does, add a little more flour. Cover the top of the bowl with a towel and leave for 20 to 30 minutes.
  2. Divide the dough into 2-3 pieces. Roll out the first piece on a cutting board sprinkled with flour into a rectangle about 1-1.5 cm thick. Cut this into smaller rectangles. With each of these pieces, cut a hole in the middle with a knife and twist one end of the dough through the hole. The form doesn't need to be perfect.
  3. Preheat a small frying pan and fry the taratushki 2 pieces at a time on both sides until golden brown. If necessary, pour more oil. Place cooked taratushki on a plate with a paper towel.
  4. Sprinkle with powdered sugar when ready to eat.
