Spring-Summer Salad
The very first greens in my garden come in April or early May and usually it’s sorrel, chives, green garlic and parsley. Adding a couple more different herbs and vegetables to these greens gives me an excellent light, fresh and very healthy salad to start the season. Also you can add radishes and asparagus, which also are early spring vegetables. Try this salad with different herbs such as basil, cilantro, dill, etc. It’s not only my favorite salad, kids love it too!

Ingredients
- bunch of sorrel leaves
- bunch of green onions
- a small bunch of green garlic
- a small bunch of parsley
- 1 medium cucumber
- 3-4 tomatoes
- ~5 tbsp parmesan grated
- olive oil
- salt to taste
Instructions
- All vegetables and herbs wash and dry. Pick sorrel leaves into 2-3 pieces and put in a deep bowl. Add the chopped green onions and garlic, parsley, sliced cucumber and tomatoes, sprinkle with the cheese on top, olive oil and salt to taste.
