Scrambled Eggs with Bacon, Tomato and Goat Cheese
We ate a similar omelete during our vacation in a French café for breakfast. It was served with fried new potatos in olive oil with herbs and a spicy tomato sauce.
When I prepared this dish at home, I used goat cheese with garlic and herbs. This cheese is easy to find, I bought it at Trader Joes. If you have just regular goat cheese, then add a little chopped parsley, dill, oregano or other herbs as well as a little bit of garlic powder.

Ingredients
- 3 eggs
- 1 tomato
- 1-2 strips of bacon
- 2 tbsp milk
- salt, pepper
- 1-2 tbsp goat cheese
Instructions
- Finely chop the bacon and fry in a dry frying pan until golden brown. Add the finely chopped tomato to the bacon and stir, then cook for a couple of minutes.
- Beat the eggs in a bowl, add the milk, salt and pepper, and whisk with a fork.
- Pour the eggs in the pan with the bacon and tomato, and cook the scrambled eggs to your taste.
- Put the omelet onto a plate, add slices of cheese and serve immediately.
