  1. Cut the potatoes into large cubes and fry them in vegetable oil in a frying pan over high heat on all sides until golden brown.
  2. Cut into medium cubes the meat, cactus, poblano, carrots, zucchini, onions and tomatoes. Finely chop the garlic and slice the jalapeno.
  3. Put the potatoes, heat the oil in frying pan, fry the onion and garlic at first, about 3-5 minutes, add the meat and carrots, cook for about 10 minutes, stirring occasionally.
  4. Add the remaining vegetables, salt, pepper, stir, then pour water or broth, add tomato paste, cover, reduce the heat and simmer about 20 minutes or until the potatoes and meat are cooked through.
