Risotto with Peas and Parmesan
Easy and simple recipe for a tasty, tender and delicious risotto. Risotto is a common dish made of rice in northern Italy. You can add to risotto different ingredients such as meat, chicken, seafood, mushrooms, fruits and vegetables. Chicken broth can be replaced with vegetable broth or meat broth.

Ingredients
- 2-3 shallots
- 2-3 cloves of garlic
- 2 tsp thyme leaves
- olive oil
- 2 tbsp risotto 'arborio'
- 0.5 cup of white wine
- 1 liter chicken broth
- 1 tbsp green peas
- salt, pepper to taste
- 40 g butter
- 2 tbsp parmesan grated
Instructions
- Finely chop the shallots and garlic. Preheat a large frying pan and fry the olive oil in it over medium heat onion, garlic and thyme leaves about 2 minutes, stirring all the time. Then add the risotto, fry it, stirring all the time, about 2-3 minutes, then pour the wine and wait until it is absorbed. Next add the chicken broth and cook until tender, over low heat for about 20 minutes. Add the peas 10 minutes before the risotto is finished cooking.
- Add to the finished risotto salt, pepper, butter and grated parmesan cheese, stir and let rest for about 5 minutes, then serve.
