Pizza with Tomato, Avocado and Egg
The perfect dish for a quick lunch or brunch. You can cook pizza crusts in advance and keep them in a paper bag. Usually I make pizza dough by myself, but you can buy ready made pizza dough, pizza crusts, pita bread for this recipe.

Ingredients
- 300-400 g (~0.78lb) pizza dough
- 1 avocado
- 2 tbsp Roma tomatoes oven-dried
- salt, pepper to taste
- 1 tbsp lime juice
- 1-2 tbsp cilantro leaves
- 3 eggs
- 3 tbsp cheese grated
- little butter for the eggs
Instructions
- Roll out the pizza crusts, and lightly prick each with a fork and fry them on both sides in a dry cast iron pan.
- In another pan, heat a little butter and fry the eggs.
- Clean the avocado, put in a bowl and mash with a fork. Add the tomatoes, garlic powder, salt, pepper, lime juice, finely chopped cilantro leaves and mix. Add this onto the pizza crusts, top with the egg, sprinkle with cheese and put on a cast-iron pan again. Cover with a lid and keep for 1-2 minutes on low heat, until cheese melts. Serve immediately.
