Lemon Madeleine

Madeleine cookies are one of my family’s favorite desserts. They are not very cheap in the store and kids eat these cookies so quick. But it’s actually really simple to make and they turn out so much better than store bought. Plus its easy to add different flavors. The only problem is you need to have a madeleine mold, but even if you don’t have it at the moment, you can use a muffin pan, the taste will not change.

Try making these French cookies with different flavors like vanilla, mint, orange, lavender, chocolate or go savory with rosemary, nuts, cheese and dried fruits.

  1. Melt the butter and let cool. Lightly beat the eggs with a mixer, add the sugar and vanilla, mix, then add the cooled butter, zest, lemon juice, honey and mix again. Pour the sifted flour with baking powder, salt and starch, knead the dough, cover and refrigerate for 1 hour.
  2. Oil the madeleine mold (if you have a silicone one, it's not necessary) and fill the dough about 3/4 full.
  3. Heat the oven to 200'C (390F) and bake the madeleine until golden brown, about 10-12 minutes, then cool them slightly and sprinkle with powdered sugar.
