Langostini Sandwich
This is a take on the classic lobster roll. We had some leftover langostini and decided to try something different from what we usually make from them. It’s important to not use too much mayonnaise and if you cook the langostini first, let it cool before mixing or the mayonnaise will turn really runny.

Ingredients
- 3 buns
- 2 cups langostini
- 1 tbsp lemon juice fresh
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1 tsp black pepper
- salt to taste
- 2 tbsp green onions
- 1/3 cup mayonnaise
- 1 tsp Bay seasoning or cayenne pepper
Instructions
- Combine the mayonnaise with the black pepper, salt, garlic powder, bay seasoning (or cayenne pepper) and lemon juice. Taste and add more seasoning as needed or depending on your taste. Take the cooked and cooled langostini and drizzle lightly with olive oil, then sprinkle some salt and bay seasoning over them. Next add the mayonnaise to the langostini a little at a time and mix. It’s important to add the mayonnaise to the langostini instead of the other way around because you can see how much mayonnaise you need to add. Start with half the mayonnaise and then add a little more until you get it the consistency you want, the langostini should be coated but not lost in the mayonnaise.
- Next grill the buns and sprinkle some garlic powder on each side, this gives it a little more flavor. Finally top each bun with about a 1/3 cup of the mixture and add the chopped green onion to the top. Cover with the other bun and enjoy.
