Ingredients
- 3 large red or yellow bell peppers
- 2 medium eggplants
- 2 zucchini
- 1 large red onion
- 2 tsp olive oil
- 2 tsp lemon juice
- 2 tsp lemon zest
- 2 tsp vinegar for the sauce
- 1 tsp Dijon mustard for the sauce
- small bunch of basil for the sauce
- 1/4 cup olive oil for the sauce
Instructions
- Mix olive oil with lemon juice. Whisk the vinegar with the mustard, add 1 tsp. water, chopped basil, mix, and pour in the olive oil.
- Cut the peppers into 4 pieces, cleaned of seeds and bake under the grill in highly preheated oven. Remove, cover with foil, and leave for 5 minutes. Peel the peppers and cut into wide strips. Keep warm.
- Cut the eggplant and zucchini into slices, onion large pieces, and sprinkle with oil. Prepare in a frying pan for the grill, transfer to bowl with peppers. Mix the vegetables with lemon butter, put on a dish.
