- 3 cups corn cobs
- small bunch green onions
- small red onion
- 2 tbsp canola oil
- 2 tbsp mayonnaise
- 4 tbsp crema or sour cream Crema is like Mexican sour cream
- 2-3 tbsp lime juice
- salt and pepper to taste
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1 tsp Elote seasoning blend optional
- 1/3 cup of Cotija cheese
- 4 tbsp cilantro
- Heat oil in a large skillet and add the corn and chopped green onions. Cook for about 2 min, then season with salt and pepper; stir it and cook without moving until charred on sides, then toss once or twice. Transfer to a large bowl and leave it in the fridge. Chop the red onion and add it to the cooled corn.
- Mix mayo with crema or sour cream in a bowl, then add lime juice, salt, pepper (to taste), smoked paprika, chili and garlic powder, Elote seasoning blend (optional), feta and cilantro. Pour cheese mixture over corn and gently stir until combined. Add extra cheese for topping, paprika or chili powder and serve. Serve with lime wedges.
