Easy, tasty and flavorful dish. You can put the eggplant on toast, or simply use as an eggplant salad.
Ingredients
- 1 eggplant medium
- 2-3 pieces bread for toast
- 2 cloves of garlic
- a small bunch parsley and cilantro finely chopped
- 4 tbsp olive oil
- salt, pepper to taste
- parmesan grated
Instructions
- Slice the eggplant about .5 cm thick, salt on both sides and set aside for 20-25 minutes.
- To prepare the marinade, mix olive oil, herbs, crushed garlic, salt and pepper together.
- Rinse the salt from the eggplant and dry with a paper towel. Then fry in a pan or grill until golden brown. Mix in a bowl with the marinade and let stand for about 2 hours or more in the refrigerator. Grill the bread for the toast, top with eggplant, and sprinkle with grated cheese.
