  1. Slice the eggplant about .5 cm thick, salt on both sides and set aside for 20-25 minutes.
  2. To prepare the marinade, mix olive oil, herbs, crushed garlic, salt and pepper together.
  3. Rinse the salt from the eggplant and dry with a paper towel. Then fry in a pan or grill until golden brown. Mix in a bowl with the marinade and let stand for about 2 hours or more in the refrigerator. Grill the bread for the toast, top with eggplant, and sprinkle with grated cheese.
