This cake can also be prepared with any other sour berries. If using sweet berries, add a little lemon juice and zest to the cream.
Ingredients
- 120 g flour
- 3 eggs
- 0.5 cup sugar
- pinch of salt
- vanilla
- 1 tsp backing powder
- 1 tbsp Amaretto
- 1 cup heavy whipping cream
- 40 g powdered sugar
- 1 tbsp cocoa
- 350 g cherries pitted
- mint leaves for decoration
Instructions
- Beat the sugar and eggs with a mixer, then add the vanilla, salt, sifted flour with baking powder and whisk again.
- Grease the baking pan with oil. Next, pour the batter and cook in a preheated 200'C oven for 20-25 minutes. Check the cake for readiness with a toothpick. Cool and cut into 2 round cakes.
- Whip the cream with powdered sugar, add the cocoa, Amaretto and beat until it stiffens.
- Spread half the cream on the bottom of one piece of cake and top with half of the cherries, then cover with the second piece, repeating the above. Decorate with mint leaves and put in fridge for 5-10 hours.
