I still have lots of basil in my garden, so I decided to make some pesto and use it for a simple but really tasty dish. I added mozzarella and Feta cheese on the pastry, plus parmesan in the pesto.

Ingredients
- 1/3 cup pesto
- 1 sheet puff pastry
- ~1/2 cup Mozzarella and Feta cheese
- 1 egg beaten
Instructions
- Preheat oven to 200C. Line a baking sheet with parchment paper.
- Spread pesto on flattened dough, then sprinkle with cheese. Roll the dough, cut into eight pieces and arrange them on your baking sheet. Brush with beaten egg.
- Bake for 20-25 min, until golden brown.
