Baked Vegetables with Cheese

Delicious, hearty, flavorful and colorful appetizer. If you like it more spicy, use fresh garlic instead of garlic powder. Also you can add herbs to your taste: parsley, dill, cilantro, or a mixture of Italian herbs. I’m using Ukrainian cheese for this dish called “Brinza”, it’s similar to feta cheese or another goat cheese. Alternatively you can use mozzarella.

  1. Cut the eggplant into circles, season with salt and leave for 15-20 minutes. Then put eggplant in the pan, add pepper, drizzle with oil and bake in oven for about 20-25 minutes at 190'C ( 375F). Remove from the oven, cool.
  2. Slice the tomatoes and cheese. Add a little oil to the pan or fireproof dish, put vegetables and cheese into a circle, sprinkle the top with olive oil, garlic powder and place in oven for 10-15 minutes. Decorate with chopped greens.
