Baguette with herbs, tomatoes and cheese

Quite simple to prepare, flavorful and colorful appetizer, a bit like bruschetta. Unlike bruschetta which is toasted, this recipe is baked in the oven with all the ingredients. Very good idea for a picnic, it can be easily prepared ahead of time and heated on a grill. Fresh tomatoes can be replaced with sun-dried tomatoes.

    1. Put the tomatoes in boiling water for 30 seconds and then in cold water. Remove the skin and cut the tomatoes into cubes. Finely chop the herbs and garlic. Mix together in olive oil with grated cheese. Add salt and pepper.
    2. Slice the baguette like a bun and open it, then place on the foil. Put the mixture of tomatoes, herbs and oil on each half, then close and wrap tightly. Preheat oven to 380F and cook for about 10-15 minutes.
