Zucchini Latkes
Hi! This is Nikita again with the recipe of zucchini latkes. This is a Jewish dish, served in Hanukkah, but you don’t need to wait for the holidays to cook them. While there are many kinds of latkes like the original, my mom make Potato latkes, I thought it would be interesting to try this kind of latkes.
The ingredients are similar to the original, but with zucchini. First grate 1 large potato, 1 medium onion, and 1 medium zucchini (coarse grater), squeeze the water from them. Remember that the drier they are, the better they will taste. Then you mix that with chopped dill, 1 tsp of garlic powder, salt and pepper to taste, and an egg.
Next in a hot pan with vegetable oil, take 1 tablespoon of the mixture into the pan and press down them with a spoon. Wait for 4-5 min on each side and place them on paper towels to dry.
Serve immediately with either sour cream or yogurt. This recipe can make at least 8-10 latkes. Hope you like this.
