Tomato-Pepper Pasta Sauce

My husband made a great tomato sauce for ravioli but you can use this sauce for any pasta also. The sauce is simple to make, full of flavor and can be enjoyed for a few days in a row with all different kinds of meals. The tomato-pepper pasta sauce an excellent dish for a casual dinner at home or for entertaining guests. Very easy and a great way to use up leftover veggies from the garden.

    1. First, grill the red pepper and remove skin. Chop the onion, carrot and garlic roughly, then combine with the red pepper in a mixer and roughly chop again together. Heat a frying pan and saute the vegetables from the mixer a little, then add the butter. At the same time, chop the tomatoes in the blender roughly and add to the frying pan, mixing together. Add a little salt and pepper, mix and bring to a boil, then bring to low and let simmer for 10 minutes. In the end add the chopped basil leaves and serve.
    2. You can also add some white wine to the mixture but be sure to boil it off to kill the alcohol flavor.
    3. The leftovers can be stored for a few days in a refrigerator.
