Tomato-Pepper Pasta Sauce
My husband made a great tomato sauce for ravioli but you can use this sauce for any pasta also. The sauce is simple to make, full of flavor and can be enjoyed for a few days in a row with all different kinds of meals. The tomato-pepper pasta sauce an excellent dish for a casual dinner at home or for entertaining guests. Very easy and a great way to use up leftover veggies from the garden.

Ingredients
- 1/4 cup onion
- 1/4 cup carrots
- 3 cloves of garlic
- 1/4 cup sweet red pepper
- 28 ounce can of tomatoes
- 3 tbsp butter
- pinch of salt, pepper
- bunch of basil leaves
Instructions
- First, grill the red pepper and remove skin. Chop the onion, carrot and garlic roughly, then combine with the red pepper in a mixer and roughly chop again together. Heat a frying pan and saute the vegetables from the mixer a little, then add the butter. At the same time, chop the tomatoes in the blender roughly and add to the frying pan, mixing together. Add a little salt and pepper, mix and bring to a boil, then bring to low and let simmer for 10 minutes. In the end add the chopped basil leaves and serve.
- You can also add some white wine to the mixture but be sure to boil it off to kill the alcohol flavor.
- The leftovers can be stored for a few days in a refrigerator.
