Roasted Marinated Peppers

This spicy appetizer is a great idea for a party. They can be stored in the marinade for about a week in the refrigerator if you cook them in high quantities. Good served with fish or meat. I usually use red or yellow bell peppers.

  1. Preheat oven to 190'C (375F) and bake the peppers on a baking sheet, about 40 minutes or until the skin is dark. Cool and peel.
  2. Finely chop the garlic and crush it in a mortar with salt, black pepper and thyme leaves.
  3. Cut the peppers into strips and mix with garlic and thyme, pour olive oil on top and leave for a couple of hours.
