Pickled Cherry Tomatoes
In August when there are a lot of different vegetables in my garden, I like to cook easy and quick dishes such as salads or simple appetizers. But usually I have too many tomatoes and cucumbers which are not possible to use it all at once, so I can them for the fall-winter. For example, sweet and sour sliced pickles that are easy to make and can be stored in the refrigerator for a long time. With tomatoes I make spicy salsa, tomato paste or dried tomatoes with olive oil and herbs, I even cooked tomato jam and it was so tasty!
This recipe is quick pickled cherry tomatoes with herbs and garlic. Use herbs to your taste and what is growing in your garden, such as parsley, dill, basil, cilantro, etc. It’s mostly important that you use fresh herbs. Tomatoes are ready the next day.

Ingredients
- 500 g (1.1lb) cherry tomatoes
- bunch of cilantro
- bunch of dill
- 3 cloves of garlic
- 1 tsp salt
Instructions
- Make a small slice in each tomato, careful not to cut all the way through, this is just to allow the tomatoes to absorb the flavors and help to marinate them quicker.
- Finely chop the garlic, herbs and mix with the tomatoes and salt. Put everything in a bag, close tightly and leave for a couple of hours, then put in the refrigerator overnight. Serve with potatoes, meat
