Peach Frangipane Tart with Homemade Peach Jam Recipe

Ingredients
- 113 g butter cold, cut into small cubes, For the dough
- 1 1/4 cups flour For the dough
- 1/4 tsp salt For the dough
- 1 tbsp sugar For the dough
- 1 tsp vanilla For the dough
- 1 tsp cinnamon For the dough
- 1/4 cup buttermilk cold, For the dough
- ~2 tbsp peach jam For coating the crust
- 1/2 cup butter room temperature, Frangipane
- 1/2 cup sugar Frangipane
- 1 tsp almond extract Frangipane
- 1 tsp vanilla extract Frangipane
- 2 eggs Frangipane
- 1 1/4 cups almond meal Frangipane
- 2 tbsp flour Frangipane
- 2 sliced peaches Topping
- peach jam warmed, Topping
Instructions
- Cut the cold butter into cubes. Add the flour, sugar, salt, vanilla, cinnamon and butter in a food processor, then beat for a few seconds to form into crumbs. Add cold buttermilk and beat again. Wrap the dough in plastic wrap, form into a disk, close tightly and place in refrigerator for at least 1 hour.
- Roll out the dough on a floured cutting board and put it in a 9 Inch diameter tart mold. Even the edges and remove the excess dough. I used to spread the dough on plastic wrap, then cover on the top with the other plastic wrap and rolled the dough so it does not stick. If the dough is too soft and sticky, put it in the freezer for a very short time, and roll again. Preheat oven to 350, line the mold with the crust with parchment paper and fill with pie weights or beans. Bake for 15 minutes, remove the parchment paper and bake for another 5 min., cool.
- In a large bowl mix butter with sugar until creamy. Incorporate eggs one at a time. Add vanilla and almond extract. Gently incorporate almond meal and flour.
- Spread a thin layer of peach jam over the baked crust, then evenly frangipane, sliced peaches on top and bake for 25-30 min. When it's ready, brush slices of peaches with warm peach jam, let it cool.
