Orzo with Tomatoes, Pepper and Feta Recipe

We love dishes with orzo, they are light, fresh and so tasty! This recipe has easy ingredients and is a great light lunch or dinner! Enjoy!
Ingredients
- 1 bell pepper roasted
- ~1 cup orzo pasta
- 200 g feta
- 1-2 tomatoes
- basil leaves
- salt, pepper to taste
- 3 cloves of garlic
- olive oil
- 1/3 cup pine nuts
Instructions
- Dice the tomato then peel the roasted pepper and chop as well. Fry the finely chopped garlic in olive oil for a couple of minutes. Next add the diced tomato and chopped pepper. Fry a few more minutes, stirring all the time.
- Finely cut the basil, roast the pine nuts in a dry frying pan.
- Boil the orzo in salted water, drain and return to the pan. Add the roasted vegetables with garlic, nuts, cheese and basil. Pour more olive oil on top if necessary.
