Ingredients
- 1 whole chicken or 2 chicken breast and 2 legs
- 3 oranges or 8 tangerines
- 200 ml white wine dry
- 10 large cloves of garlic
- orange zest of half an orange
- 2 tbsp teriyaki sauce
- 5 tbsp olive oil
- 2 tbsp butter
- a few sprigs thyme
- 1 tsp black pepper
- sea salt to taste
Instructions
- Cut chicken in a half lengthwise, rub with salt and teriyaki sauce, and place in the refrigerator for 2 hours.
- Pour wine into skillet, add the zest and pepper, and let reduce to about half of original volume then set aside. Cut tangerines or oranges into quarters.
- Heat the olive oil and butter in a large skillet, then dip the chicken in, skin side down, and fry over high heat until golden brown, about 2 minutes on each side. Then move to a baking pan.
- Put the garlic and tangerines (or oranges) in a frying pan with oil and butter and fry for 2 min. Then add to the baking pan with the chicken and add the thyme. Cover and place in a preheated oven at 190'C (375 F). Cook for about 15 min then pour wine and cook for another 10 min.
- Arrange chicken on a hot plates with tangerines and garlic. Serve with juice from the pan with chicken.
