Chicken Breast with Mushroom Sauce
Very tasty and tender chicken with creamy mushroom sauce. The dish can be served with potatoes, pasta, rice or vegetables. It’s good to add dried herbs to the flour such as parsley, oregano or a mix of Italian herbs to give it additional flavor. Sherry can be replaced with a dry white wine.

Ingredients
- 3 chicken breasts
- 20 g flour
- salt, pepper to taste
- 1 tsp paprika
- garlic powder to taste
- herbs dried
- olive oil
- 200 g (0.44lb) mushrooms
- 2 shallots
- 4 tbsp butter
- 4 tbsp sherry
- 8 tbsp heavy whipping cream

Instructions
- Mix the flour, salt, pepper, garlic powder, paprika and dried herbs. Beat the chicken breast to flatten and tenderize then roll in the flour with seasonings. Fry on medium heat in olive oil until tender and golden brown. Place on paper towel.
- Chop the shallots and slice the mushrooms. Add the butter in the frying pan where you fried the chicken, then add the onions and cook for about 2 min. Then add the mushrooms and cook for an additional 3-5 minutes.
- Add salt and pepper, sprinkle with garlic powder and add the sherry. Mix everything and boil to reduce slightly. Then add the heavy whipping cream, mix again, reduce the heat and the mushrooms. Cook, stirring occasionally, for 2-3 minutes.
- Place the chicken on a dish, pour mushroom sauce on top and garnish with parsley.
