Blini

Blini-thin pancakes. Very tasty and delicious pancakes, similar to crepes or Swedish pancakes, but this is the Russian version. When you add the boiling water the batter size will increase several times, so be sure to use a large bowl. You can serve with sour cream, whipped cream, chocolate, various jams or wrap them in a different filling such as meat, vegetables, fish or cheese.

  1. Beat the eggs until foaming, then add the salt and continue beating on high speed. Gradually pour in boiling water, then the buttermilk, add the sifted flour with baking soda, sugar and vegetable oil.
  2. Cook in a pan on both sides until golden brown, then transfer them to a plate, spreading a little butter on each layer.
