Battered Trout
For this dish I usually use steelhead trout but you can also use salmon. For me, I think, salmon gets a little drier than other fish. This dish is good to serve along with potatoes or other vegetables, salads.

Ingredients
- 700 g steelhead trout fillet
- 1 lemon
- salt, pepper to taste
- 1/2 cup flour
- 3 tsp garlic powder
- oil for frying
- 1/3 cup flour for the batter
- 1 egg for the batter
- 50 ml white wine dry, for the batter
- 70 ml water for the batter
- a pinch salt for the batter
Instructions
- Prepare the batter by separating the egg yolks, then mix the yolk with flour, garlic powder, wine and water until smooth. Set aside for 10 minutes. Beat the egg whites and salt into a thick foam and add to the batter, mix gently and leave for another 5 minutes.
- Cut the fish fillets to medium strips, salt and pepper, sprinkle with lemon juice. Mix flour with garlic powder.
- Heat the oil for deep-frying (I used a wok) to 180'C (360F). Dip the fillets first in flour with garlic powder, then in the batter, then put into the hot oil and cook until golden-brown color, about one and a half minutes on each side. Put the fish on paper towels, then serve with a lemon immediately.
