Asparagus-tomatoes Tart with Cheese
Puff pastry is one of my favorite ingredients to use. You can always come up with something original to cook, whether it’s a dessert or something savory with cheese,
vegetables or meat. From simple ingredients you’ll have something very tasty, original and satisfying. This appetizer with asparagus, sun-dried tomatoes and cottage cheese my 12 year old son absolutely LOVED and said: it tastes amazing!
I don’t buy sun-dried tomatoes any more because I make them in olive oil myself. In the summer and fall I use my leftover tomatoes in my garden to make them. Here is the recipe of ‘Dried Tomatoes in Olive Oil’.
Now is a perfect time to make this appetizer because asparagus is in season. Try to drizzle a little bit of balsamic sauce and add other ingredients for your taste.

Ingredients
- 1 sheet frozen puff pastry
- 24 pcs asparagus
- 6 sun-dried tomatoes in olive oil
- 0.5 cup ricotta cheese
- 0.5 cup feta cheese
- 1/3 cup grated Jarlsberg cheese
- 1 tsp tarragon leaves chopped
- 1 tsp bay leaves chopped
- salt, pepper to taste
Instructions
- Roll out the puff pastry on a floured board and divide into 6 rectangles. Mark lightly with a sharp knife about 1 cm from the edges to make a inner rectangle. Put the squares on a baking sheet with parchment paper and place in a preheated 200' C (395 F) oven for 15 minutes.
- Mix the cottage or ricotta cheese with the feta cheese and chopped herbs in a bowl. Add the salt and pepper to your taste. Dry the tomatoes with a paper towel from the olive oil.
- Remove the rectangles from the oven, spread the cheese with herbs in the middle evenly across the inside of the pastry shell, top with asparagus, sun-dried tomatoes, salt and pepper and sprinkle with grated cheese. Put in the oven for another 10-15 minutes.
