Olive Oil with Herbs

For this recipe you should use only dried herbs, garlic, and hot peppers. Oil can be flavored in two ways: putting the dried ingredients directly into the oil (chili, herbs, zest) or pre-soak in vinegar to marinate and then put everything in the oil. If you use non dried herbs, they will spoil and the oil will turn bad. The finished oil is more aromatic and has a pleasant, unique flavor. I use this oil in salads and vegetables, on Serrano ham, sandwiches, nuts or you can use to cook meat and fish, scallops which gives the dish more flavor and taste.

Herbs that I have chosen: basil, oregano, sage, mint, thyme, rosemary and others, such as lavender and etc.

  1. Put dried herbs in a jar and pour warmed (not hot) high-quality oil. Add the garlic and red and black pepper. Leave the jar for 2-3 weeks in well-lit area. If you want, you can remove the herbs from the jar but I prefer leaving the herbs inside.
