- 4 kg lamb leg
- 2-3 tbsp tarragon leaves
- 2-3 tbsp mint leaves
- 1 orange zest
- 1 tbsp olive oil
- 100 g butter
- salt, pepper to taste
- Chop the mint and tarragon leaves and soften the butter. Mix the olive oil with the butter, orange zest, tarragon and mint leaves.
- Wash the leg of lamb, pat dry, and score it with a knife. Spread the marinade thoroughly on the lamb and then add salt and pepper. Let it marinate for a couple of hours.
- Put the leg on a baking sheet and place in preheated oven at 425F for 20 minutes. Reduce oven temperature to 355F and cook for another 1 1/2 hour. Put the leg on a dish and cover with foil. Let rest for 30 minutes and then serve.
