  1. Chop the mint and tarragon leaves and soften the butter. Mix the olive oil with the butter, orange zest, tarragon and mint leaves.
  2. Wash the leg of lamb, pat dry, and score it with a knife. Spread the marinade thoroughly on the lamb and then add salt and pepper. Let it marinate for a couple of hours.
  3. Put the leg on a baking sheet and place in preheated oven at 425F for 20 minutes. Reduce oven temperature to 355F and cook for another 1 1/2 hour. Put the leg on a dish and cover with foil. Let rest for 30 minutes and then serve.
