Ingredients
- 1 large red pepper
- 1 large yellow pepper
- 1 large orange pepper
- 3 pc anchovy fillets
- 1 tbsp capers
- sprig of rosemary
- a handful of olives kalamata
- 3 cloves of garlic
- 1 pinch of salt
- freshly ground black pepper
- 50 ml olive oil
- little bit of lemon juice
Instructions
- Put the peppers in the oven for 30-40 minutes at 390F until the skin begins to turn black, turning them occasionally. Let cool and clean the skin and seeds. Cut the peppers into medium strips and marinate with finely chopped anchovies, capers, rosemary, olives, crushed and chopped garlic. On top, drizzle with lemon juice and olive oil. Add salt and pepper. Marinate for at least 2-3 hours or at most two days. Before serving, bring to room temperature.
