Juicy, tender salmon with a nice slightly sour sauce. A great combination of fish and sorrel.
Ingredients
- 4 fresh salmon fillets (200 g each)
- 3 shallots
- 400 g sorrel leaves
- dry white wine
- 100 ml fish stock
- 400 ml sour cream
- 40 g butter
- 1 tbsp vegetable oil
- lemon
- 4 sprigs dill
- salt
Instructions
- Wash and dry the fish fillets, add salt and pepper, then set aside. Peel and chop the onion. Wash the sorrel and remove the stems, then chop the leaves. Pour the wine and fish broth in a saucepan. Add the chopped shallots and cook, for 15 minutes over high heat. Add the sour cream and continue cooking, stirring occasionally for 5 minutes. Next add the sorrel and stir for 2-3 min. Turn the heat off and keep warm.
- Add the butter and vegetable oil in a frying pan. Fry the fillet of salmon on medium heat for 7-8 minutes on each side. Fish should be slightly browned. Arrange the sauce on warmed plates. Top with the salmon, lemon slices and decorate with sprigs of dill.
