Sopa Azteca or tortilla soup is a Mexican traditional simple soup, prepared with just a few ingredients: pasilla chile- and a tomato -chicken broth, topped with a tortilla chips, creamy avocado, cheese, and tangy Mexican crema. It's simple, but a very rich and flavorful soup! If you cannot find Mexican crema, you can use sour cream.

The word tamal comes from the Aztec word tamalli which means "wrapped". Tamales are made from corn-based dough and filled with various stuffing, wrapped in corn husk or banana leaf, then steamed.
The most common dishes eaten in Mexico on Day of the Dead are molé, Pan de Muerto or tamales.

Calabaza en Tacha (candied pumpkin), is a traditional Mexican pumpkin dish cooked in brown sugar cane syrup, served as a snack, dessert or breakfast. A calabaza is a type of winter squash, with a sweet flavor and very firm texture.
