Coconut-Orange Cake with Cream Cheese

A very festive and delicious cake, which turns out tender with a nice coconut taste and it is easy to prepare. A great idea for Christmas and/or New Year!

You can decorate with chopped nuts the cake or add them to the cream. Also for decoration you can use: coconut flakes, rosemary twigs, cranberries or other berries, orange slices, chocolate, etc.

  1. In a bowl, whisk the egg, then add the condensed milk and the flour mixed with the baking powder and whisk again. The dough should not be dense, but like a pancake batter.
  2. On a baking sheet, place parchment paper on top and draw a circle or circles on it with a pencil, using a plate of size of your cake you want to make. I used a diameter of 16 cm, it turned out to be a small cake with 5 levels (cakes), if you use double the amount of ingredients, then you can use an average plate with a diameter of ~ 20 cm.
  3. Spoon the dough into the middle of the circle (~ 2 tablespoons) and evenly distribute the dough throughout the circle. You’ll get a thin cake ~ 5 mm. If you want a thicker cake, then add another 1-2 tablespoons of the dough.
  4. Put the baking sheet with cakes in a preheated 180 ° C oven for 7-10 minutes (watch the cakes so they will not become burnt, they are supposed to turn out a light brown color). The finished cakes will slightly sticky so use a spatula and carefully remove the hot cakes immediately and put them on the counter top or a silicone mat. Cook all of the remaining dough that way. I got 5 thin small cakes this way.
  5. Prepare the cream: mix the cream cheese with the powdered sugar and orange peel by hand, using a whisk or fork. In a separate bowl, whip the whipped cream in a mixer and add it to the cream cheese mix, gently mixing with a spoon or spatula. Then add the coconut flakes and nuts, and mix again.
  6. Lay out the first cake on a plate, spread with a layer of cream cheese, and repeat with the rest of the cakes. Spread on top of the last cake with the cream cheese mix (and also on the sides if you wish).
  7. Decorate to your taste, for example, coconut flakes, nuts, chocolate chips, berries, orange slices, etc. Leave it in the refrigerator for 1-2 hours.
