Ingredients
- 8 cherry tomatoes
- 130 g mozzarella
- 30-32 wonton wrappers
- a small bunch of basil leaves
- egg whites or water
- 1 cup vegetable or olive oil
- 2/3 cup balsamic vinegar for balsamic sauce
- 1/4 cup light brown sugar for balsamic sauce
Instructions
- Prepare the balsamic sauce first in a small saucepan. Pour the balsamic vinegar, add the sugar, stir and cook over low heat, stirring all the time until the sauce thickens and is reduced by half, about 45 minutes. Let cool.
- Divide the tomatoes into 4 pieces. Cut the cheese into medium cubes and chop the basil.
- On each wonton wrapper put a piece of tomato, some cheese, and a bit of basil. Brush the edges of the wonton with egg whites or water. Then fold into a triangle, making sure to seal the edges tight.
- Heat the oil to 350 'in a frying pan, put 8-10 pieces of the wontons and cook 40-60 seconds turning if necessary, until golden brown.
