Baked Eggs with Bacon
Very interesting idea how to cook the ordinary breakfast of bacon and eggs. I used a one cup bowl, but you can use a muffin pan also which are a little smaller, so you’ll get more servings too. It’s not necessary to add spinach or it can be replaced by other herbs as well.

Ingredients
- 4 thin strips bacon
- 4 eggs
- 1/2 cup half&half
- 1 tbsp spinach leaves, medium or finely chopped
- 1/4 cup parmesan finely grated
- salt, pepper to your taste
Instructions
- Preheat oven to 360F (fan forced). Whisk together the eggs, cream, spinach, parmesan cheese, salt and pepper. Pour the mixture into a greased bowl and bake for 12 minutes or until the eggs are just set.
- Fry the bacon in a frying pan a couple of minutes on both sides. Carefully take the bowl of eggs from the oven and invert on a plate. Top with strips of ready bacon crosswise and decorate with herbs.
