Angel Hair Alfredo
Hello everyone! Its me, Nikita. Sorry I haven’t posted in what is it… Oh, 5-6 months. Today it is getting cold here in Rochester, so I decided to make a very warm and hearty dish to be prepared during this cold winter; an angel hair Alfredo with tomatoes for a nice fresh taste, onions and garlic because they add a nice, subtle flavor, and finally mushrooms to add a nice meaty texture and taste to this vegetarian dish.
What you need for the pasta: A box of angel hair pasta, a cup of Shiitake mushrooms, 5-6 cherry tomatoes, Salt; Pepper, Basil to taste, a 1/4 cup of onions, and 5+ pieces of garlic
For the Alfredo: A stick of butter, 1 cup of heavy cream, 2 cups of shredded cheese (Parmesan is best for this), and Salt and pepper to taste.
Instructions: Prep all your ingredients. The cooking process will be very quick, so you will want to slice the mushrooms and tomatoes into quarters, dice the onions, and shred the cheese beforehand. Fill your pot 2/3 of the way with water and salt it. Then wait until it reaches a boil. While waiting for the water to boil, brown the onions and cook the mushrooms with a pan for about 5 minutes while stirring very often to avoid burning. When the water finally boils, follow the cooking instructions for the pasta. For me it was about 3-4 minutes.
While the pasta’s cooking, turn off the heat for the onions and mushrooms and with a new pan, start to make your Alfredo. Place a stick of butter in the pan on medium and melt the stick. After the stick fully melts, pour in the heavy cream and the shredded cheese then constantly stir. Add salt and pepper after 30 seconds, then keep stirring until the cheese fully melts. After the Alfredo is done, combine the pasta, tomatoes, and the onion/mushroom. Mix together very thoroughly. Then add the Alfredo sauce and stir with the pasta. Finally, sprinkle the basil and any remaining cheese and serve.
You might think it can’t serve a family of four, but the Alfredo sauce is really thick and heavy so you probably will get delicious leftovers! I hope you love this delicious, beautiful, and very easy pasta dish!
