Stuffed Chicken with Rice and Dried Fruits
Fragrant, tender chicken with delicious rice. Dried fruits and nuts give to the rice a nice sweet-sour taste. I also use lemon thyme which gives the rice a nice flavor and aroma. Take the apples out of the oven a little earlier than the chicken. You can put potatoes, carrots and other vegetables on baking sheet along with apples. Add a little white wine, and sprinkle the top of the chicken with paprika.

Ingredients
- 1 whole chicken ~2kg (4.4lb)
- 0.5 cap of half-cooked rice
- 30-50 g (1.7oz) of dried apricots, prunes, raisins, walnuts
- 3 apples
- small piece of ginger
- 1 tbsp thyme leaves
- 3 cloves of garlic
- salt, pepper to taste
- 1 tbsp olive oil
Instructions
- Chop the prunes, dried apricots, nuts, and finely chop the ginger. Cut one of the apples into small cubes and press the garlic. Mix the boiled rice with apples, dried fruits, thyme leaves, nuts, and ginger. Put the chicken on the pan, top with salt and pepper.
- Mix the garlic with olive oil and rub the chicken with this mixture. Cut the remaining 2 apples into large slices and arrange around the chicken. Bake it in the oven at 400F (200'C) about one and a half to two hours or until the chicken is tender, basting the chicken occasionally with the juice.
- Cut the finished chicken into pieces and serve with apples, sprinkle with a little thyme leaves.
